Beet & Apple Salad
Preparation: 5 MINUTES
1 bag Champêtre Diced Beets
15 ml (1 Tbsp) lemon juice
45 ml (3 Tbsp) olive or canola oil
15 ml (1 Tbsp) apple cidre vinegar
1 shallot, finely chopped
100 g (3.5 oz) goat or feta cheese, crumbled (optional)
Salt and pepper
Steps to follow
1. Dice apples and sprinkle with lemon juice to avoid browning; set aside.
2. In a large salad bowl, mix olive oil, vinegar and shallot.
3. Gently mix in beets and apples until well-coated in dressing. Season to taste.
* This salad will be even tastier if prepared and chilled 1h to 24h ahead of time, then served at room temperature.
